A simple and delicious recipe for baked artichoke and feta cheese dip. Only 5 ingredients, no chopping, very little prep, an hour in the oven, and it's done! This is a healthy, light, fresh tasting dip which really lets the artichoke and feta tastes come through.
1can of artichokes, 390g / 14oz, rinsed and patted dry
6garlic cloves, whole
1TbspExtra virgin olive oil
100g(3.5oz)feta cheese
Handful of basil
Instructions
Pre-heat the oven to 200C / 390F
Cover the bottom of a small skillet with olive oil, and top with the artichokes and whole garlic cloves. Drizzle a little more oil on top, and sprinkle with salt and pepper to taste.
Cover with foil and bake for 1 hour in the oven, until the garlic cloves are soft.
Remove from the oven and, using a fork, mash up the artichokes and garlic cloves. Be sure to get each of the garlic cloves smushed up and mixed around.
Add the feta cheese and whole basil leaves, stir through with the fork.
Cover again and put back in the oven for another 15 minutes.
Take out of the oven and, using the fork again, stir the mixture through to incorporate the feta cheese, which will now be melty and creamy.
Pick up your dipping instruments and get to work!
Notes
This makes a small dish of dip, great for 2-4 people to nibble on. Just scale it up for parties!
