Minty Mediterranean Bocconcini Salad

Soft, creamy bocconcini cheese stars in this delicious salad bursting with summery Mediterranean flavors. Cherry tomatoes and bocconcini pair with artichokes and avocado for a filling lunch or side dish. Ingredients

  • 250 g (9 oz) Bocconcini
  • 200 g (7 oz) cherry tomatoes, halved
  • 1 Avocado, chopped
  • 280 g (10 oz) jar of marinated artichokes, rinsed and patted dry
  • 3 Tbsp Kalamata Olives
  • 3 Tbsp pine nuts
  • 3 Tbsp chopped fresh mint

Lemon Mint Dressing

  • 1 lemon, juiced and zested
  • 3 Tbsp extra virgin olive oil
  • 1 tsp honey
  • ½ tsp Dijon mustard

Instructions 

  • Make your dressing by whisking all ingredients (lemon juice, lemon zest, oil, honey and mustard) in a bowl.
  • Make the salad by combining the cherry tomatoes, bocconcini, artichokes and avocado to a bowl. Add dressing to taste and toss to combine.
  • Add olives, pine nuts and fresh mint to the salad and toss to combine, or just use these ingredients as a topping.
