Ingredients

  • 14 oz (400 g) cherry tomatoes
  • 11 oz (300 g) bocconcini

For the Avocado Herb Dip

  • 1 avocado
  • ½ cup (75 g) raw pistachio kernels
  • 3 cloves of garlic
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 6 Tbsp extra virgin olive oil
  • A few handfuls basil, mint and chives
  • Salt, to taste

Instructions

  • Prepare the dip by blending all ingredients in a food processor or with a hand blender.
  • Make your skewers by slicing the tomatoes in half and placing toothpicks through them, with a ball of bocconcini sandwiched between the two slices.
  • Plate your skewers with approximately half of the yield of dip.

Notes

This recipe makes the amount pictured - around 30 skewers. You'll have double the amount of dip you're likely to need, so if you're making this for a larger crowd you can double the skewers without needing to double the dip.
