Ingredients

  • 7 oz (200 g) angel hair pasta
  • 1 lb (500 g) cherry tomatoes, halved
  • 6 cloves garlic, minced
  • 2 tsp balsamic vinegar
  • salt and pepper, to taste
  • 2-3 cups (475-700 ml) vegetable stock
  • 1 Tbsp (15 g) butter
  • 1 cup (100 g) parmesan or Italian hard cheese
  • 1 bunch basil, and/or flat leaf parsley

Instructions

  • Heat a little olive oil in a wide, deep pot. Over a low to medium heat, saute your tomatoes and garlic until the garlic becomes fragrant and soft.
1 lb cherry tomatoes, 6 cloves garlic
  • Add the balsamic vinegar, butter, and a generous sprinkling of salt and pepper. Continue to cook the tomatoes, stirring frequently, for about 5 minutes. The tomato juices, butter and balsamic will come together to make a slightly sticky coating for the tomatoes.
2 tsp balsamic vinegar, 1 Tbsp butter, salt and pepper
  • Add the pasta to the pan, and then pour in 2 cups of the vegetable stock. Mix things around as best you can to stop the pasta sticking together. At first, the pasta is still very hard and will sit on top of the tomatoes a bit. But after a minute or two it will become more pliable and will be immersed in the vegetable stock.
7 oz angel hair pasta, 2-3 cups vegetable stock
  • Now you can leave it to simmer on a very low heat, covered, for about 5 minutes. Check in on it regularly - it needs to be stirred often to stop it sticking to the bottom. Add additional vegetable stock if the pan starts to dry out before the pasta is cooked and just a light coating of sauce remains. If it's too dry and sticky, add some extra vegetable stock to loosen it up. If there's a lot of liquid left and it feels soupy, just continue to simmer it uncovered for another minute or two until it cooks down.
  • Once the pasta is cooked al dente, add the cheese to the pan and mix through until it is melted. It will combine with the starchy liquid in the pan to make a sauce.
1 cup parmesan or Italian hard cheese
  • Turn off the heat, mix the basil through the sauce, and it's ready! Serve immediately.
