Easiest Blueberry Waffles

Easiest Vanilla Blueberry Waffles

Ingredients

  • 150 g (1.2 cups) flour
  • 1 Tbsp sugar
  • ½ Tbsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 200 ml (0.85 cups) milk, I used almond milk
  • 3 Tbsp vegetable oil
  • 1 egg
  • ¼ tsp vanilla extract
  • A couple handfuls of blueberries

Instructions 

  • Mix all the dry ingredients together in a bowl. Whisk in the milk, egg, oil and vanilla. Throw in a couple of handfuls of blueberries (its a good idea to toss these in flour first so they don't make the batter any more moist), and then leave the batter to sit for 5 minutes while the waffle iron pre-heats.
  • Pour into your waffle iron and cook as instructed.
  • When they're ready, throw a few more blueberries on top and drizzle with syrup.
  • Tuck in!

Notes

Note: Assuming you have a 4-waffle iron, it will be exactly the right amount of batter to fill it once. You could double it, triple it etc, and freeze leftovers (they reheat nicely in the toaster oven) But lets face it, on a Saturday morning that feels like a bit too much effort sometimes.
