2medium sized tomatoes, the tastiest and ripest you can find!, quartered
ΒΌof a red onion
1green chili, seeded
Handful of fresh cilantro, aka coriander
2avocados
Juice of 1 lime
Salt and pepper to taste.
Instructions
Place the tomatoes, onion, chili and cilantro into a food processor and pulse until finely chopped. It might go a little frothy. That's OK- it will calm down when you add the avocado!
In a bowl, mash up the avocado and then add the salsa. I like to add one avocado first and really mash it into the salsa, before adding the second and allowing it to be chunky.
When you're satisfied with the texture, add the lime juice and salt and pepper to taste.
