mild & fresh avocado salsa

Ingredients

  • 2 medium sized tomatoes, the tastiest and ripest you can find!, quartered
  • ΒΌ of a red onion
  • 1 green chili, seeded
  • Handful of fresh cilantro, aka coriander
  • 2 avocados
  • Juice of 1 lime
  • Salt and pepper to taste.

Instructions 

  • Place the tomatoes, onion, chili and cilantro into a food processor and pulse until finely chopped. It might go a little frothy. That's OK- it will calm down when you add the avocado!
  • In a bowl, mash up the avocado and then add the salsa. I like to add one avocado first and really mash it into the salsa, before adding the second and allowing it to be chunky.
  • When you're satisfied with the texture, add the lime juice and salt and pepper to taste.
