Blueberry, Vanilla & White Bean Baby Food Puree

A deliciously fruity iron rich baby food puree! Roasted blueberries, pear and vanilla are paired with white beans to make a creamy, smooth puree. A delicious way to pack iron and protein into baby's meals, with the added benefit of antioxidants from the blueberries.

Ingredients

  • 2 cups blueberries, 200g or 7oz
  • 1 pear, peeled, cored and sliced into chunks
  • ½ cup of cannelini beans, about 8 Tbsp if you don't do cups
  • ¼ tsp vanilla extract

Instructions 

  • Scatter the pear chunks and blueberries on a baking dish lined with parchment paper. Bake at 180C (360F) for 15-20mins. The blueberries should be leaching juice and the pears should crush easily under a little pressure from a fork.
  • Puree with the white beans and vanilla extract until smooth.

Suitable for freezing up to 6 months.
