Air Fryer Veggie Fajitas

Smoky, sweet vegetable fajitas cook like a dream in the air fryer! With portobello mushrooms, peppers and onions in a smoky sweet chili sauce, these fajitas make a substantial meatless dinner. Vegetarian or even vegan depending on your choice of toppings.

Ingredients

  • 4 portobello mushrooms, sliced into strips
  • 2 sweet peppers, red or yellow, sliced into strips
  • 1 large onion, sliced into strips

Fajita Sauce*

  • 3 Tbsp sweet chili sauce
  • 1 Tbsp soy sauce
  • 1 tsp smoked paprika
  • tsp chili powder, more if you want it spicy
  • ½ tsp cumin
  • ¼ tsp ground coriander

To Serve

  • 8 to rtillas
  • Toppings of your choice - guacamole, salsa, sour cream or vegan crema, chopped fresh cilantro (coriander)

Instructions 

  • Make the fajita sauce by whisking all ingredients together.
  • Place the sliced vegetables in a large bowl and coat with the fajita sauce. Allow to marinade for a little while in the fridge if you have the time. If you don't, that's OK too - you can go ahead and put them in straight away.
  • Heat the air fryer to 200C / 390F.
  • Coat the marinaded vegetables with a spray of oil and place in the fry basket.
  • Cook for 15 minutes, opening the fryer up to mix the vegetables halfway through.
  • They're ready when the vegetables are juicy and a little bit charred. You may want to cook for another 5 minutes if they're not yet charred to your liking.
  • Serve immediately with warmed tortillas and your toppings of choice.

Notes

* Swap this for 1/4 cup of your favourite ready made fajita sauce if you wish.
