Roasted Halloumi, Broccoli + Smashed Potatoes
Parboil and smash potatoes
Toss broccoli in lemon zest, garlic and oil
Give the potatoes a head start, then add the broccoli and red pepper rings
Make a tahini sauce while it cooks
Add the sauce and some final garnishes (chili and green onion)
Such a tasty vegetarian dinner!
