Goats Cheese, Cherry Tomato & Spinach Pasta

Deliciously creamy spinach pasta with goat cheese, smoked cheddar and cherry tomatoes! This incredible vegetarian pasta comes together in just 20 minutes. It is bursting with flavor, comforting but light, and packed with healthy greens.

Ingredients

  • 400 g (14 oz) fusilli pasta
  • Olive oil
  • 4 cloves garlic, sliced
  • 250 g (8.8oz) cherry tomatoes
  • 500 g (18 oz) bag of fresh spinach
  • A few handfuls of basil
  • Salt, pepper and chili flakes to taste
  • 150 g (5.3 oz) soft goat cheese
  • 80 g (2.8 oz) smoked cheddar

Instructions 

  • Boil your pasta according to package instructions. You'll prepare everything else while the pasta cooks.
  • In a large pan, sautee your garlic cloves in a glug of olive oil, until they are starting to brown.
  • Turn off the heat and add the cherry tomatoes, stirring them into the garlicky oil. (I suggest turning the heat off first because the water from the tomatoes + the hot oil will make them spit.)
  • Add the basil and goat cheese to the pan and stir until the goat cheese starts to melt. Now let it sit until the pasta is ready.
  • Drain the pasta and add to the pan with the garlic, tomatoes and cherry tomatoes.
  • Add the spinach and, over a very low heat, stir everything together constantly until the pasta is coated in goat cheese and the spinach is just wilted. (You may need to do the spinach in batches.)
  • Add in the smoked cheddar and give it a final stir before serving.
