Avocado Toast with Pan Fried Capers, Olives & Dukkah

The perfect way to enjoy avocado toast for dinner, elevating it with some simple pantry ingredients! Crispy pan fried capers, kalamata olives and a sprinkling of dukkah seasoning make this super flavorful. A light vegan meal that can be enjoyed with sourdough or any other fresh bread you have available.

Ingredients

  • 1-2 slices sourdough bread
  • 0.5 large avocado, sliced
  • 1 Tbsp capers
  • 3-4 kalamata olives, sliced
  • 1 tsp dukkah
  • Salt, pepper and chili flakes, to taste
  • extra virgin olive oil, for drizzling

Instructions 

  • Take the capers out of the jar and place on a paper towel. Pat the capers as dry as you can.
  • In a small frying pan or saucepan, heat a layer of olive oil. Add the capers and fry for about 5 minutes, until they have shrunk down and crisped up.
  • Toast your bread.
  • Once toasted, top your bread with avocado slices, or mash it over the bread with a fork.
  • Top with the fried capers, olives, and a sprinkling of dukkah.
  • Add salt, pepper and chili flakes to taste, and drizzle with extra virgin olive oil.
