Asparagus Boursin Tart with Hot Honey

An easy puff pastry asparagus tart with lots of fun flavors, which is quick to assemble in a matter of minutes! This recipe has lots of flexibility and is a perfect vegetarian summer meal paired with salad.

Ingredients

  • 1 sheet puff pastry
  • 12 oz asparagus, trimmed and cut in half - weight is before trimming
  • olive oil
  • 5.3 oz boursin cheese, one package
  • hot honey, for drizzling - to taste
  • everything but the bagel seasoning, for sprinkling - to taste

Instructions 

  1. Prep the asparagus. Trim the woody stems away, then slice each piece into two equal halves. Gather them on a plate or chopping board, then drizzle with a little bit of olive oil and sprinkle of salt and pepper. Use your hands to work the olive oil through to get all of the pieces very lightly coated.
  2. Roll out the puff pastry sheet (leaving the parchment paper in place) and poke several holes into it with a fork. Crumble the boursin over the top. You want it in blobs, not spread across the pastry, because gaps between the toppings gives the pastry space to cook more evenly.
  3. Now arrange the asparagus on the pastry sheet, pressing it into the boursin. I like to arrange it into three rows, so that six pieces can be cut from it without needing to slice through any asparagus.
  4. Bake for 15-20 minutes, until the pastry is cooked through and the asparagus is tender.
  5. Remove from the oven and immediately drizzle hot honey over the whole tart.
  6. Sprinkle everything but the bagel seasoning (or whatever alternative you may be using) over the top.
  7. Slice and serve.
