Ingredients

  • 2 piadina flatbreads
  • 2-3 tbsp pizza sauce, approximate
  • 4-6 tbsp mozzarella cheese, approximate, see notes
  • 1 tbsp pesto, for drizzling - optional

Instructions

  1. Preheat the oven to 200C / 400F.
  2. Assemble your pizzas. Place the piadina on a baking sheet, spread the sauce over the base, then top with cheese. Add any other toppings you like at this stage.
  3. Place in the oven for 5-7 minutes (less for grated, low moisture mozzarella and more for the fresh moist stuff) or until the cheese is melted and bubbling.
  4. Drizzle with pesto or garlic oil, or garnish with fresh basil leaves, and serve immediately.

Notes

Mozzarella: You can use grated mozzarella, cubed mozzarella or fresh torn mozzarella, but the cook times will vary with grated being the quickest to cook - so just keep a close eye on the oven after 5 minutes.
