This one is full of surprises!

An asparagus tart could have been a little boring, but when an entire pack of creamy garlicky boursin serves as the base, and generous amounts of hot honey and “everything but the bagel seasoning” are thrown on top, we are in for a real treat. These flavorful elements come together to make this fabulous with minimal ingredients and minimal time.

However, I would not encourage you to go out and buy those things if you don’t already have them, because there are other ways you can make this work. Raid your cupboards and see what you can find!

Ingredient Notes & Variations

  • Boursin cheese could be swapped with any garlicky / herby soft cheese or goat cheese. But you really want something flavorful. I tried this with plain goat cheese and brie, and didn’t find those punchy enough compared to the Boursin.
  • The amount of hot honey you use will depend on what kind of hot honey you are using. Some are pure honey infused with chili – these should be used sparingly because they are quite intense. Some are dressings which include other ingredients such as cider vinegar and water, and I find I want to be more generous with these because they are less concentrated.
  • Hot honey could be replaced with normal honey + a pinch of chili flakes, or you could switch directions and go for a balsamic glaze.
  • I used an “everything but the bagel” style seasoning (which is a little less common in the UK than it is in the US, but I find it at M&S food). Dukkah or zaatar would be great alternatives. If you use a seasoning mix that doesn’t have the same level of crunch, consider throwing on some crushed toasted nuts, sesame seeds, black onion seeds (nigella seeds) as well. More is more!

Asparagus Boursin Tart with Hot Honey

An easy puff pastry asparagus tart with lots of fun flavors, which is quick to assemble in a matter of minutes! This recipe has lots of flexibility and is a perfect vegetarian summer meal paired with salad.

Ingredients

  • 1 sheet puff pastry
  • 12 oz asparagus, trimmed and cut in half – weight is before trimming
  • olive oil
  • 5.3 oz boursin cheese, one package
  • hot honey, for drizzling – to taste
  • everything but the bagel seasoning, for sprinkling – to taste

Instructions 

  1. Prep the asparagus. Trim the woody stems away, then slice each piece into two equal halves. Gather them on a plate or chopping board, then drizzle with a little bit of olive oil and sprinkle of salt and pepper. Use your hands to work the olive oil through to get all of the pieces very lightly coated.
  2. Roll out the puff pastry sheet (leaving the parchment paper in place) and poke several holes into it with a fork. Crumble the boursin over the top. You want it in blobs, not spread across the pastry, because gaps between the toppings gives the pastry space to cook more evenly.
  3. Now arrange the asparagus on the pastry sheet, pressing it into the boursin. I like to arrange it into three rows, so that six pieces can be cut from it without needing to slice through any asparagus.
  4. Bake for 15-20 minutes, until the pastry is cooked through and the asparagus is tender.
  5. Remove from the oven and immediately drizzle hot honey over the whole tart.
  6. Sprinkle everything but the bagel seasoning (or whatever alternative you may be using) over the top.
  7. Slice and serve.
