Italian piadina makes the best tortilla / flatbread style pizzas! These are easy to make using your favorite toppings, and work well as a quick lunch or a fun meal for kids.
Piadina Pizzas > Tortilla Pizzas
Piadina pizzas are the new big thing around here! My daughter was going through a phase of asking for tortilla pizzas, which are a decent option for those who want a really easy and super thin crusted pizza situation. Fun and easy to make and customize, all was well. But I saw a pack of piadinas in the shop and just wondered if they might be better.
The answer is YES. Yes, they are better. Ultimately a lot will depend on your brand of piadina and your brand of wraps, so I am comparing what we can get in UK supermarkets. But for me, having sampled the Crosta and Mollica and M&S brands, I find they have two advantages:
- Piadina is an Italian flatbread which is often made with olive oil – the resulting flavor is a great match for pizza. I also find them a little saltier than tortilla wraps.
- I find them to be a smidge thicker than a tortilla, so a little easier to eat, while still satisfying those who don’t want a thick bready base.
Ingredient Notes & Tips
- Piadina, obvs. They vary in size so this is the kind of recipe where I don’t bother to give super precise measurements, you’ll just go with the flow.
- A jarred pizza sauce serves me well here, though a smear of passata + a sprinkle of dried herbs can do in a pinch. Red pesto also makes a great base.
- The type of mozzarella you use is the biggest factor when determining how long these pizzas will need in the oven. Pre grated mozzarella will crisp up quickly, while fresh mozzarella will take longer. I used some low moisture cubed mozzarella which was somewhere in between.
- I like to drizzle a little pesto on top to liven things up, this is optional of course. You could also drizzle garlic or chili oil.
- Toppings! I don’t include any here, but the world is your oyster. Throw on some little veggie scraps, some olives or sundried tomatoes, or some extra cheeses such as feta, blue cheese or goat cheese.

Piadina Pizza
Ingredients
- 2 piadina flatbreads
- 2-3 tbsp pizza sauce, approximate
- 4-6 tbsp mozzarella cheese, approximate, see notes
- 1 tbsp pesto, for drizzling – optional
Instructions
- Preheat the oven to 200C / 400F.
- Assemble your pizzas. Place the piadina on a baking sheet, spread the sauce over the base, then top with cheese. Add any other toppings you like at this stage.
- Place in the oven for 5-7 minutes (less for grated, low moisture mozzarella and more for the fresh moist stuff) or until the cheese is melted and bubbling.
- Drizzle with pesto or garlic oil, or garnish with fresh basil leaves, and serve immediately.
