Well, look what we have here. My ninth halloumi salad recipe!

Salty halloumi cheese is never better than when paired with some sweeter veggies and this salad nails it with the trio of sweet potato, roasted peppers and juicy cherry tomatoes. The creamy honey lime dressing packs a serious punch, with tangy onion adding some more contrast.

The ingredients list is fairly short, especially considering how much flavor is going on here, and budget friendly too (as ever, this is depending on the season and where you shop).

Ingredient Tips & Swaps

  • Dressing: This recipe includes a super easy honey lime dressing, which is where I landed after testing this with a LOT of different dressings. We want something with a thick creamy texture that will sit with the sweet and salty flavors in this salad just right, and this one hits the spot. But if you want to try something different, close runners up were my Pesto Salad Dressing and the Pistachio Dressing from this Burrata Salad. Both were excellent with this recipe, but in completely different ways.
  • Fresh herbs: I am throwing in a big handful of basil leaves but feel free to add or swap in cilantro (fresh coriander), chives, parsley, or whatever else you have going.
  • Pepper: I love the addition of sweet pointed (Romano) pepper roasted alongside the sweet potato, but you can use strips of bell pepper or halved mini peppers. Or just leave it out.
  • Onion: I am going for very thin slices of red onion here, but if you want a more subtle allium flavor, some green (spring) onion would be a great alternative.
  • Extras: Feel free to bulk it out with some chickpeas, cucumber, whatever else your heart desires in a salad – but the dressing recipe included is the perfect amount for just this recipe, so you’ll want to scale it up if you’re adding a substantial amount of extras!

Sweet Potato & Halloumi Salad

This tasty halloumi sweet potato salad recipe with honey lime dressing is a simple meal that perfectly combines sweet and salty flavors. The addition of fried or grilled halloumi cheese keeps this salad filling enough to be your main meal.

Ingredients

  • 1 large head butter or romaine lettuce, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 1 wedge red onion, thinly sliced
  • 2 medium sweet potatoes, cubed
  • 1 red Romano or pointed pepper, sliced into thick rings
  • 8 oz block of halloumi cheese, cut widthways into 6 slices
  • 1 handful fresh basil leaves
  • olive oil, for roasting

Honey Lime Dressing

  • 2 tablespoons mayonnaise
  • 1 tablespoons olive oil
  • 2 teaspoons honey
  • ½ lime juice and zest
  • ¼ tsp dijon mustard
  • salt and pepper, to taste

Instructions 

  • Preheat the oven to 400F / 200C / 180C Fan.
  • Toss the cubed sweet potato and sliced pepper in olive oil, add salt and pepper to taste, then scatter on a baking tray. Place in the oven for 20 minutes.
    2 medium sweet potatoes, 1 red Romano or pointed pepper, olive oil, salt and pepper
  • Meanwhile, prepare the dressing by whisking all of the ingredients together in a small bowl.
    2 tablespoons mayonnaise, 1 tablespoons olive oil, 1/2 lime juice and zest, 1/4 tsp dijon mustard, 2 teaspoons honey
  • Once the sweet potatoes are tender, remove from the oven and set aside to cool down a bit while you prepare the halloumi.
  • Grill or fry the halloumi in a pan for a couple minutes on each side, until golden.

  • Now work quickly to assemble the salad. Add the sliced lettuce, basil leaves, cherry tomatoes, onion, sweet potato and peppers into a salad bowl. Toss with most of the dressing.

  • Add the halloumi slices on top and drizzle the remaining dressing over the top.
  • Serve immediately.
