Lentils are an amazing protein and iron rich ingredient for healthy and delicious vegetarian cooking! I have a variety of easy lentil recipes covering all of the main types: red lentils, green lentils, brown lentils and black lentils.
- Green and brown lentils can be great as a direct swap-in for ground beef. They work amazing in bolognese or tacos!
- Red lentils can give soups and sauces the most dreamy creamy texture. They are great for iron rich baby food and can fly under the radar in kids meals too.
- Black (beluga) lentils are extra rich and luxurious, and are the lentil of choice for dal makhani.
